Swordfish on the grill and grilled vegetables from the garden Yummm. Looking for a fish friendly marinade or rub thats not to high in sodium any suggestions? Have been using low sodium italian, lemon, and garlic but would like to try something else.

Well, we weren't as good as you Karen, lol. Adam, LeAnn, and the girls came over to swim and BBQ and we did homemade burgers (chopped onion, worchestershire, garlic, sea salt, fresh ground pepper, an egg) topped with either chedder or gouda, fruit salad, grilled squash (love veggies grilled), some olives and pickles, and LeAnn brought red velvet cupcakes.

As for a fish marinade, Rog uses either olive oil (very heart healthy), red wine vinegar, lemon, lime, or oranges, and whatever herbs he happens to grab. Do you guys like spicy stuff? Look at the Jamacian jerk ones on the net, you can get some healthy ones that are yummy.

I have to have the low sodium thing to......

I'll share my Top Secret, all purpose rub recipe if you'd like to try it, but you have to promise NOT to laugh at one of the ingredients. By changing just the one flavored ingredient, you can completely change the character of this rub. Try your own experiments with it!
If you simply leave that one item out, it works well on just about anything.


Majic Dust
1/2 cup Paprika
1/4 cup Kosher Salt,finely ground(use less if need be)
1/4 cup brown/turbinado Sugar plus a couple of tbls
3 tablespoons Mustard Powder
1/4 cup Mild Chili Powder
1/4 cup Ground Cumin OR Adobo
1/8 cup Ground Black Pepper
1/4 cup granulated Garlic
¼ cup granulated Onion
1-2 tablespoons Cayenne Pepper OR Chipotle pepper
1 box of Black Cherry Jello (3 ounces)
1 LEVEL tablespoon Chinese Casia Cinnamon

I run this thru my blender to make a fine powder.

If you want it a little hotter/spicier,increase the Mustard powder or the Black Pepper to 1/4 cup each

I also use a few tablespoons LESS of the Cumin and the Kosher salt. You can also cut back on the cinnamon if you want. Casia is pretty strong and it doesn't take much to overwhelm everything else. You can also kick it up by adding a little Chipotle pepper for a warmer, smokier flavor.

Cherry Jello??? I have never had cherry jello in a rub, but I suppose it might be very delicious! The rest of the ingredients sounds dreamy! I thought I had the recipe for your magic dust, but I don't remember the jello. Do you use Cherry wood in the smoker with this rub too?

I think that the magic dust sounds great!

We had tacos with some tomatoes from Dads garden~we also made tortilla bowls with forms that I have and had taco salad in edible bowls!!!

Shelley.....my Majic Dust recipe is always evolving.

The gelatin in Jello is what I was after, but the flavorings are just an added bonus and adds a different twist, depending on what I am doing with the rub.
Since I have no idea what I am doing in the kitchen, I have to keep experimenting until it tastes good!

Hmm The rub sounds tasty I'll have to give it a try will have to do the market run through to get a few things I'm missing. Jello and that cinnamon. Thanks Jim

Do you guys like cornbread? This recipe ROCKS!!

HEYWOOD’S JALAPENO CORNBREAD


3 eggs ¼ cup oil
8 oz sour cream
1 16 oz can cream corn
½ tsp baking soda
1 ½ cups chopped green onion
1 tsp salt
1 ¼ cup yellow corn meal (plain)
3 jalapenos diced
8 oz Monterey jack cheese
4 oz jalapeno cheese


Preheat oven to 350 degrees. Put oil in a cast iron skillet and heat to smoking hot.
Slightly beat eggs.
Add sour cream, soda, and salt. Stir to blend.
Add onions, peppers, corn then corn meal.

Grate cheese and mix together. Add 2/3 of cheese to mixture.



Pour hot oil into mixture stirring rapidly to melt cheese then pour mixture into hot skillet and top with remaining 1/3 cheese and bake 40 minutes until browned slightly.








Of course you know it is mandatory that you use a cast iron pan to cook it in.
